Everyday Stir-Fry

Paleoish type super quick & easy stir-fry is a favorite lunch when everyone is home.  Here's what I had in mine today.

1/2 onion
1 lb ground turkey
1 lb ground beef
2 cups vegetables (I used leftover mixed organic vegetables)
1 qt jar diced tomatoes
about 6 oz quinoa pasta
garlic salt
Italian seasoning

Brown meat and onions.  Drain.  Add veggies & tomatoes. Sprinkle with garlic salt and Italian seasoning.  Bring to a boil, add pasta.  Cook about 10 minutes until noodles are done.

Almond Butter Dark Chocolate Chip Cookies

Is it possible I have never shared this recipe?!?!?  This is a wonderful cookie recipe that comes together quickly, stores well on the counter for a few days, freezes well, and is well liked by all in our house.  The only problem is that I ate 3 of them yesterday.  :)  I used Ghiardelli 60% dark chocolate chips & per my sister-in law's genius, I added 1/3 cup of chopped pecans.

Roasted Red Pepper with Butternut Squash Noodles

I've taken a bit of a break from trying new recipes.  I reverted back to my beginning paleo meals:  some sort of meat & 2 veggies or salad.  This works & is sustainable, but I have been longing to have enough time to try something new.  I wanted to spiralize something!  I had a butternut squash, fresh parsley in my garden and a bit of leftover chicken, voila!  Time to make
roasted red pepper butter nut squash noodles with chicken.

This was unique, tasty and filling.

Cinnamon Rolls

Here's another review from the new cookbook, The Paleo Kitchen.  Sunday morning I made the cinnamon rolls.  I had all the ingredients on hand, they came together fairly easy, and turned out looking great.  They only part I failed on was making the coconut butter able to drizzle, I ended up serving it on the side to smear on.  The taste and texture reminded me of the biscuits from Hardee's that had lots of cinnamon in them.  My family liked these, so I will make them again.

Burger Bar Party

This weekend we hosted some very casual, comfortable company.  This included adults, kids, paleo eaters and conventional eaters.  I failed to snap a pic, but this is what we served.  Hope this helps spark some ideas for the next time you have friends or family over.

Chocolate Chip Coconut Flour Pancakes

I had a request for chocolate chip pancakes from my backyard campers this morning.  I used this recipe.  All the campers like them!

I used the semi-sweet chocolate chips from Costco.

Summer Eating

Do you eat different in the summer?  It seems that we have so much we want/need to do outside, no one cares about meals.  Often over a typical suppertime we are gone.  Yesterday was a perfect example of this.  We were drinking smoothies about 4:00 (some in the house had a PB&J), swam and played at the park, then we did not eat supper till 7:30.  We were all really ready for a meal, but I was not in the mood to be in the kitchen long or make a lot of dishes.  Here's what I came up with:  grilled chicken thighs & broccoli eaten out on the deck.  It was a gorgeous evening.

Boneless, skinless chicken thighs sprinkled with seasoning salt, pepper and Simply Organic All-Purpose Seasoning.  Grilled & served with fresh cilantro.

Steamed broccoli with garlic salt.
