Weekly Supper Plan- April 1

I so enjoy spending time creating meals and trying new recipes.  It was wonderful having my girls home from school this week and I even had the opportunity to teach them a few new kitchen skills.  Looking ahead it will be back to our normal school and work routine.  With the warmer temperatures, I'm ready to utilize my Instant Pot and do more outdoor cooking!

Monday:
Instant Pot Paleo Chicken Marsala -1 1/2 of this recipe
Mashed potatoes
Mixed vegetables with garlic butter

Tuesday:
Grilled Burgers- serve with dill pickles, lettuce, ketchup, mustard, olives, sauerkraut
Roasted Butternut Squash
Roasted asparagus
Cole slaw

Wednesday:
Grilled Fish with Tomato-Lime Salsa
Quinoa Pilaf
Green Beans


Thursday:
Taco Soup- serve with cheese, corn chips, cilantro, avocado
Cabbage Beef Soup

Weekly Meal Plan February 26-March 2 (All Paleo and/or Gluten Free)

Well, it looks like February is ending with lots of evening activities for our family.  I always like to simplify our meals when this happens.  That means a week of 1 dish, Crock Pot and Instant Pot meals coming your way!

Monday-
Paleo Crockpot Chicken Cacciatore

Tuesday-
Taco Bar (Taco meat, corn chips, corn, lettuce, tomato, olives, avocado, cheese, sour cream, cilantro)

Weekly Meal Plan Feb 19-23 (Paleo and/or Gluten Free)

The temperatures are warming up in the Midwest.  This got me thinking that grilling is a MUST this week!  Also trying 5 new recipes.  Try them along with me, or wait for my reviews throughout the week.  Cheers to a week of healthy eating!

Monday:
Copycat Royal Red Robin Burgers, lettuce wrapped (burger, bacon, egg, tomato, mayo, cheese)
Sweet Potato Fries
Caprese Avocado Salad- Sub honey for the brown sugar called for in this recipe

Prep for tomorrow:  Thaw ground turkey for soup, thaw chicken for Wednesday

Tuesday:
Creamy Sausage and Kale Soup  Sub seasoned ground turkey for the sausage
Lemon and Garlic Butter Fish
Roasted Carrots

Prep for tomorrow:  Clean and chop veggies for salad, thaw hamburger for Thursday

Wednesday:

Weekly Meal Plan-Feb 5-9 (Paleo and/or Gluten Free)

I am making use of my slow cooker and InstantPot this week.  Also including some one dish/ one pan meals for quicker clean up.

Monday:
Stupid Easy Salsa Chicken- double
Tortillas, taco toppings
Sweet corn

Prep for tomorrow:  thaw ground beef

Tuesday:
Persian Spiced Beef with Butternut Squash
Green Beans
Millet Flax Bread with butter

Prep for tomorrow: thaw chicken breasts

Wednesday:
One Pan Creamy Chicken and Vegetables -double this and use heavy whipping cream  instead of coconut milk
Roasted potatoes
Berries

Prep for tomorrow:  thaw flank steak, chop salad

Thursday:
Instant Pot Paleo Mongolian Beef-double
Rice
Cooked Peas
Salad

Prep for tomorrow:  thaw 2 lbs ground beef, clean and cut carrots

Friday:
Gluten-Free Meat Loaf

Meal Planning Week of Jan 29-Feb 2 (Paleo and/or Gluten Free)

Monday:
Chunky Meat and Vegetable Soup
Paleo "Cornbread" Muffins -cut honey back to 1/3 cup
Cheese and Crackers

Prep for tomorrow:  defrost 2 lbs ground beef

Tuesday:
Make your own Taco Bar- I make a big batch of taco meat (here's a great taco seasoning recipe) and then put out all kinds of toppings; lettuce, tomatoes, avocados, cilantro, black olives, cheese, sour cream, corn chips, gluten free tortillas and salsa.
Fruit Salad

Prep for tomorrow:  defrost chicken thighs

Wednesday:
Baked Barbecue Chicken Thighs (use BBQ sauce recipe from Against All Grain Meals Made Simple that I made last week)
Roasted Sweet potatoes
Green Beans

Prep for tomorrow:  defrost ground turkey, hard boil eggs

Thursday:
Buttermilk Biscuits and Gravy with seasoned ground turkey
Gluten Free Breakfast Casserole
Paleo waffles with pure maple syrup
Berries

Prep for tomorrow:  defrost chicken breasts & make mashed potatoes if time allows

Friday:
Sheet Pan Balsamic Chicken and Brussel Sprouts

Weekly Meal Plan- Jan 22-26 (Gluten Free and/or Paleo)

As much as we try to eat supper as a family, there are some days we are all going different directions. Crock pot to the rescue! 


Prep for Monday:  Defrost 2lbs ground beef

Monday:
Slow Cooker Sloppy Joes - I will substitute coconut sugar for the brown sugar
Serve with gluten free buns, sweet potato chips and Siete Cassava chips-Lime flavored
Green beans
Fruit Tray

Prep:  Defrost stew meat

Tuesday:
Salmon Patties from Practical Paleo or find a similar recipe here
Paleo Beef Stroganoff (double batch)- serve sauce over Cappello's Fettuccine noodles- these noodles are so good!
Sauteed veggies
Mixed berries

Prep:  Defrost short ribs, make bbq sauce for Thursday

Wednesday:
Balsamic Braised Beef Short Ribs from Practical Paleo or grab the recipe here.  Double recipe.
Maple Cinnamon Roasted Butternut Squash
Steamed broccoli with grass fed butter

Prep:  Defrost chicken, defrost steaks for Friday, chop lettuce

Thursday:
Barbecue Chicken Salad from Meals Made Simple (I plan to use Primal Kitchen Ranch Dressing as a shortcut)
Amy's Kitchen Vegetable soup- 3 cans
Fruit tray

Prep:  Make marinade and pour over steaks

Friday:
Steak with Best Steak Marinade
Roasted Baby Potatoes with Herbs
Sauteed mixed vegetables
Paleo Chocolate Cake times 2 with German Chocolate Cake Frosting (I use organic heavy whipping cream instead of coconut milk and add 1 Tbsp of coconut sugar)

Meal Planning- 1 Week of Dinners (Paleo and Gluten Free)

Last week I had all my breakfast & dinner meals planned out and it was awesome!  Always helps when I meal plan and then shop.  Sometimes I do it transversely and shop and see what is available/looks good/is a good price.  Either way works fairly well, but I've been desiring a little more variety and to try a few new recipes.  We often use any leftovers for lunches, so I often make 2 entrees a night.  If your family is smaller or doesn't like leftovers, stick to one.



Sunday:
Lazy Day Lasagna -basically this recipe with your desired ratio of cheeses.  We love these gluten free noodles from Target.  This needs to be made the night before or in the morning, so think ahead.
Spaghetti Squash Bolognese- fantastic Paleo dish that comes together quickly, but the sauce can easily be made ahead.
Roasted asparagus

Prep for tomorrow:  soak chicken breasts in salt water, make dipping sauce


Monday:
Paleo Chicken Fingers with Honey Dijon Sauce
Steamed broccoli with grass fed butter

Prep for tomorrow:  defrost 2 lbs ground beef, chop onion and pepper for chili, peel and cube 4 potatoes and place in cold water in the fridge


Tuesday:
Paleo Chili
Loaded Potato Soup
Sliced cheese and crackers- we have really been loving Simple Mills Almond Flour crackers from Costco
Fruit tray

Prep for tomorrow:  make tarter sauce


Wednesday:
Paleo Fried Fish- double batch
Tartar Sauce- times 4
Sauteed vegetables in avocado oil (Brussels sprouts, onion, red pepper, broccoli)
Roasted carrots

Prep for tomorrow:  defrost beef roast, chop lettuce and veggies for salad


Thursday:
Pressure Cooker Pot Roast
Baked sweet potatoes
Salad

Prep for tomorrow:  defrost chicken


Friday:
Rotisserie Style Chicken
Tomato soup- (I made lots of this in the summer and froze it)
Mixed vegetables

Meal Plan- Summer Eats

It's summer!  I do not like to spend lots of time cooking in the summer.  But, I do want to eat healthy.  Also, I need meals that keep me eating paleo & also options that my family will actually eat!  All my main dishes are paleo, but there will be some side dishes that include gluten free grains and dairy.  This is how we make it work in our house.  Here are 20 dinner ideas for healthy, summer eating.  I'm not assigning days, just planning to cycle through these for a few weeks.  I figure 20 meals will get me through at least a month since we do not cook every night due to activities & leftovers.


Stupid Easy Chicken, shredded and served as a taco salad with French Dressing
Topping ideas:  tomatoes, olives, avocado, peppers, cucumbers, cilantro, salsa, limes, cheese, tortilla chips, ranch, sweet corn


Pineapple Beef Kabobs from Against All Grain Meals Made Simple, pg 162 with salad and roasted cauliflower

Paleo Chicken Spaghetti  Serve with Buttermilk biscuits with garlic and herbs added and fresh fruit

Barbecue Tri-Tip with Grilled Watermelon Salad and roasted carrots

Grilled Chicken with BBQ sauce, roasted potatoes, green beans

Persian Spiced Beef with Butternut Squash  Serve with sugar snap peas and fresh fruit

Grain Free Salmon Cakes  Serve with cole slaw and green beans

Spaghetti meat sauce over a choice of GF noodles or steamed broccoli

Garden Fish Packets  (omit cheese for paleo), rice, lettuce or fruit salad

Slow Cooker Paleo Turkey Meatballs, serve with salad and Crockpot Baked Sweet Potatoes 
This is a great meal when we will be gone all day.  Come home & it's all cooked.  The downside is washing 2 Crock-pots!

Grilled Hamburgers- Topping ideas: Avocado, dill pickles, tomatoes, BBQ Sauce, Fried Red Potatoes & Onions, green beans

Dijon Almond Crusted Fish Serve with roasted carrots & sugar snap peas

Chicken stir fry, cauli-rice or rice pilaf

Grilled Steak with my favorite steak marinade, mashed potatoes, Brussels sprouts, fruit

Ginger Chicken with Simple Mango/Avocado Salsa  serve with cole slaw

Slow Cooker Sloppy Joes, Buns, Peas

Ina's Grilled Lemon Chicken, fresh fruit

Grilled Lemon Pepper Salmon, Serve with roasted sweet potatoes, broccoli

Mongolian Beef over Cauliflower Rice, fruit

Greek Chicken, baked potatoes, kale chips



Summer lunch at our house is leftovers warmed up, salads, sandwiches, stir-frys, etc. 


Breakfast:
Butternut squash frittata
GF Cinnamon French Toast
Sweet potato hash with kale & eggs
Almond butter on toasted Date & Walnut Bread with berries
Spaghetti Squash Frittata
Paleo Pancakes
Scrambled Eggs & Bacon
Cooked spinach with hard boiled eggs
Twice Baked Sweet Potatoes with Eggs
Grain Free Granola with coconut milk & berries

Cucumber, Tomato & Avocado Salad

Here's what my supper looked like.  Want to make this?  Here's how.  Start by assembling the salad.  This salad is kind of like guacamole meets caprese salad.
 
Cucumber, Tomato & Avocado Salad
1 English cucumber, cubed
3 plum tomatoes, cubed
2 Hass avocados, cubed
1/2 cup red onion, chopped
handful cilantro, chopped
4 shakes Frank's Red Hot sauce
3 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar 
1 lime, juiced
salt & pepper to taste

Mix all ingredients a chill at least 1 hour before serving.

Next it's biscuit time.  I use this Buttermilk Biscuit recipe but add 2 tsp of dried herbs (basil, oregano, parsley, chives, etc.  Brush with 2 Tbsp melted butter with 1/2 tsp garlic salt.

Next, get that spaghetti squash cooking!  Mine was huge and took an hour to bake.  I follow this recipe loosely:  Spaghetti Squash Bolognese

Lastly, steam and season the broccoli.  

This meal took a fair amount of kitchen time & dishes, but I doubled most of it and will enjoy the leftovers later.  


Paleo Meal Ideas

I've been slacking a bit on meal planning & that always results in slacking on eating healthy, UGH!  Anyway, here are some meal ideas.  I hope it can be of some help for you.  Why wait until a new week to get back on track?  Let's start today!

Everyday:  Organic coffee with collagen and MCT oil, lots of water with lemon & lime

Wednesday:
Breakfast: Sweet potato hash (mine had baby kale & green onion from my garden), fried egg
Lunch:  Mixed greens with leftover roast chicken, tomatoes, carrots, radish, V&O
Supper:  Cucumber, tomato and avocado salad, Buttermilk biscuits with herbs & garlic, and Spaghetti Squash Bolognese

Thursday:
Breakfast:  Pumpkin pancakes
Lunch:  Leftovers
Supper:  Peruvian Style Chicken with green beans

Friday:
Breakfast:  Scrambled eggs & spinach (Blend eggs, spinach, garlic, salt & pepper then fry in coconut oil)
Lunch:  Salmon Salad
Supper:  Ginger Chicken and Mango Salsa, cole slaw, peas

Saturday:
Breakfast:  Mango/Kale protein smoothie
Lunch:  Grilled burgers with Paleo Hamburger buns, spiralized squash & carrots, pickles, ketchup, mustard, lettuce
Supper: Battered Fish, green beans, french fries, berries

Sunday:
Breakfast:  Paleo Dutch Babies with berries, chicken sausages
Lunch:  Apple and almond butter
Supper:  Eating with family.  I'm taking a batch of Strawberry Rhubarb Mini Tarts and a pan of Gluten-Free Rhubarb Bars.

Monday:
Breakfast: Sweet potato hash & fried egg
Lunch: Leftovers
Supper:  Roast Beef, roasted potatoes, brocolli

Tuesday:
Breakfast:  Turkey sausages & fresh fruit
Lunch:  Salad with leftover roast beef
Supper:  Grilled Lemon Chicken Salad, Herbed Focaccia Bread

Feb 1 Meal Plan

Coming off my Whole30 eating, I'm working on a meal plan for my whole family.  For me this means it has to be gluten free, minimal processed foods, carb options that my kiddos like and I can pass on sometimes.  Filling, nutritious meals that everyone can eat and meet my eating goals.  I dislike cooking special for individual family members!  Here's my plan for breakfast and supper this week.  Lunch will be leftovers or eating out this week. 

Monday-
Breakfast:  Scrambled eggs & grapefruits
Supper:  Hamburgers with sauteed mushrooms, baked potatoes, roasted squash & broccoli

Tuesday-
Breakfast:  Chocolate Coffee Protein Breakfast Bowls
Supper:  Mini meatloaves, mashed potatoes, green beans, fruit salad

Wednesday-
Breakfast:  Swirly Crustless Quiche
Supper:  Greek Chicken, roasted sweet potatoes, cooked spinach, berries

Thursday-
Breakfast:  Chicken Apple Sausages
Supper:  Steak fajita meat, Lime Cilantro Rice, corn, something desserty TBD

Friday-
Breakfast:  Practical Paleo Pumpkin Pancakes, bacon
Supper:  Leftovers

Monday- make  pudding for Tuesday breakfast
Tuesday- Marinate chicken for Wed supper
Wednesday- Thaw meat for breakfast & supper on Thurs
Thursday- Thaw bacon
