So, I haven't tried a new recipe for awhile. I have so many ingredients in my garden right now, I broke this trend by making these Italian Style Stuffed Peppers. My family all enjoyed these. They were quick and easy to put together. In the published cookbook the spinach is listed as optional, so I omitted it. I think it would be great in them. We sprinkled ours with some fresh Parmesan cheese. I doubled the recipe and ended up with this pan full:
