Coconut Pancakes with Fresh Raspberry Reduction

Last night when the door bell rang, I opened to a neighbor bringing us a huge bucket of raspberries!  The kiddos started eating them immediately and packed some in their lunch for the day.  I started searching for a raspberry pancake recipe.  I tried this recipe because I had all the ingredients and they looked like they would come together quickly.  I did not blend the raspberries or strain them, I just boiled them in the pan with the water and honey.  Some of the kiddos also put a drizzle of maple syrup since it is pretty tart, but they all like them.  I also added 1 Tbsp of vanilla to the pancake batter.

Simple Supper

Sometimes you just need simple and good food.  This meal is one of those.  Yesterday I had been gone a lot and we had harvesting, a basketball game and 2 school open houses.  So, with such a busy schedule we had this for supper.

Baked spaghetti squash (baked ahead of time) with a jar marinara (look for brands that do not add sugar)
Frozen organic mixed vegetables
Skillet fried chicken breast strips (cooked in olive oil, seasoned with seasoning salt and Simply Organic All Purpose Seasoning)

Super easy and everyone loved it, so I thought I'd share.

Caramel Apple Cake

Anyone else have a supply of fresh apples.    My gracious sister-in-law let us pick this beautiful basketful of yellow delicious apples.

One thing we made was this yummy Caramel Apple Cake.  I stored the leftovers in the fridge and have been warming the pieces up.  Better right out of the oven, but fairly good leftover.

Crock Pot Stuffed Pepper Soup

It's soup season!   With the farm equipment driving down the roads and chilly evenings, I can't wait to make soups.  The day I put this in my crock pot as I planned to be gone all afternoon and returning home at suppertime.  This is not paleo since it includes rice, but it is still gluten free and super easy.

2 lbs ground meat, cooked (I used 1 lb beef, 1 lb turkey)
4 green peppers, chopped
1 onion, chopped
2- 15 oz cans diced tomatoes or 8 cups diced fresh tomatoes
2- 15oz can tomato sauce
32oz beef broth (vegetable broth would work great too)
2 Tbsp coconut sugar
5 cloves garlic, minced
1 Tbsp salt
1 tsp pepper
4 tsp chili powder
4 cups cooked rice

Put it all in a crock pot and cook on low for 6-8 hours.  Can be topped with shredded cheddar cheese.

Flatbread/Pizza Crust

I like the pizza crust recipe I usually make, but this recipe intrigued me.  I tried it out for our pizza night this weekend.  We used ground chia seed since we do not keep psyllium husks on hand.  The flavor was very good. Even my kiddos that do not like paleo pizza crust liked it.  I think the chia seed did not make for the most desirable appearance.  I might pick up some psyllium husks and try it again.

Quick & Easy Paleo Hamburger Buns

This is the second paleo hamburger bun recipe tried.  I think this one had better flavor.  I used grape seed for the oil, arrowroot powder, and brushed the top with butter before adding the seeds.  I had a blend of black & toasted sesame seeds I sprinkled on top.  This made 4 large buns.  They were perfect for the grilled ribeye sandwiches we were eating for lunch.  Quick & Easy Paleo Hamburger Buns

Crock Pot Balsamic Chicken with Spinach

Anyone need a quick & simple weeknight meal?  So do I!  This was a winner at our house and could not be any simpler to make.  For extra ease, I used boneless chicken thighs.  Give this Crock Pot chicken recipe a try.
