Ginger Chicken with Mango Salsa

I managed to muster up enough energy to make supper tonight!  The Hubby grilled, so that made it easier.  Somehow, my picture failed to load, but there is a lovely picture of Ginger Chicken with Simple Mango Sauce.  We also had grilled asparagus and baked sweet potatoes.  It was a yummy recipe & we hope to make it again!

Busy Saturday

No pictures today.  Just scrambled eggs this morning, and a blueberry chia smoothie.  My mom made me a taco salad for lunch, wasn't that nice?

Crock Pot Italian Beef

Today was a super busy day.  I was so thankful I took about 3 minutes to throw this roast in the crock pot this morning.

I have made a recipe of a roast, pepperocini peppers and a can of beer for years.  It makes a flavorful, tender roast beef sandwich.  With beer being out on the paleo diet, I have revised it and my family likes it just as well!

Shredded Beef Sandwiches:
1 chuck roast
1 jar pepperocini peppers
about 1/2-1 cup of dry red wine (I use Cabernet)

Dump it all in a Crock Pot and cook on high for 5-6 hours or low for 8 hours.  Strain off peppers and shred beef.  Serve on favorite bread or eat alone.  

I have mine on microwave sandwich bread with mayo.  Also eating green beans and Terra chips.

Strawberry-Banana Pancakes

Here's what was for breakfast, strawberry-banana pancakes.


 
I started with this base recipe.  I added about 1/2 cup of chopped strawberries to the batter and cut back on the honey.  The kiddos topped theirs with butter & I ate mine plain.  3/4 of my toughest critics said the were "awesome,""delicious," "great!"  1/4 said they were "ok."   I thought they were wonderful!

Paleo "English Muffins" and Fried Eggs

My family requested these English muffins.

 

I've made them before and everyone likes them.  The only problem is they don't taste at all like English muffins to me!  Let me know if you can think of a better name for this recipe.

Creamy Dill Salmon

Tonight's supper is this super easy 5 Ingredient 10 Minute Creamy Dill Salmon.  I used about 1 tsp of dried dill (instead of fresh) and it was just right.  We also had beets, peas, salad and roasted sweet, red, and golden potatoes.


 

How I roast potatoes:
Drizzle a pan with olive oil.  Cube potatoes (I used a mixture of sweet, red & golden).  Toss potato cubes around in oil.  Season as desired.  Roast in 450 degree oven about 20 minutes.   

My favorite seasoning right now is Cajun.  This is the recipe I use to make mine.  I cut way back on the cayenne for my kiddos.  

Potatoes are not strict paleo.  I'm having a bit of a diet fail kind of day.  I'm still eating much better than I was a couple years ago, so I'm okay with that!

Eating at Caleri's

This is questionable paleo, but unquestionably good!  I try to make the best choices I can when I eat out.  Spinach salad at Caleri's.  Always good, always better when eaten with a friend.  :)

Baked Garlic Mushroom Chicken

New recipe for our family tonight and it was so quick and easy to put together using boneless, skinless chicken thighs from Costco.  It was a hit!  The gravy was so good, we ended up dumping it on our green beans, carrots and cauliflower.   
 
This recipe for Baked Garlic Mushroom Chicken will show up on meal plans again! 

Smoothie

Lunch on the go again today!  Chia pudding, carrots & walnuts.  Having a smoothie to get me through till supper.


 

This one has:
Vanilla almond milk
Spinach
Flax
Frozen mixed berries
1/2 frozen banana

Supper for Breakfast

So, I'm warmed up these waffles in the toaster oven and they were just as good as fresh.  Topped with cinnamon-honey coconut butter today.

Sausage & Waffles

Breakfast for supper in our house tonight!






 
First up, the waffles.  Light, crispy and delicious.  Even the child that was complaining I was making "paleo" waffles said they were awesome.  I used coconut sugar for the sweetener.  I tripled the batter & had 4 left over.  

Next, the sausage.  This is basically what I did, it's your food put whatever YOU like in yours.
1+ lb ground beef
1 tsp sea salt
1/4 tsp black pepper
1/3 tsp parsley
1/4 tsp coriander
1/3 tsp rosemary
1/3 tsp marjoram
1/3 tsp rubbed sage
1/4 tsp thyme
few shakes hot sauce1/2 Tbsp maple syrup
2 Tbsp olive oil

Mix all together, form patties, broil for a few minutes on each side.


Berries on top are just frozen organic berries, defrosted.

Lastly, the coconut cream is a really thick coconut cream from Trader Joe's whipped with a bit of honey & vanilla.  You can refrigerate a can of full fat coconut milk and take the cream off the top.

Lunch On the Go

I did not take a picture of my lunch today.  I basically grazed as I was driving from one place to the next.  I had a chia pudding, carrots, celery, macadamia nuts and hot tea.  I did take a picture of my little shopper eating her chia pudding.  She makes me smile!

Chia Seed Pudding Dr. Jill Style

I will be on the go a lot this week, so I made another batch of Chia Seed Pudding.  This time I tried Dr. Jill's Chia Pudding.  I put all the ingredients in my Vitamix except the chia seeds, then stirred them in.  I poured into 1/2 cup glass jars and they are stacked & ready to go for the week.  Note:  I used 3 Medjool dates & 5 drops of stevia.

Bacon & Eggs Florentine

This morning I threw together this egg dish.  It's tastes a lot like spinach quiche.  I also ate a piece of toast from this bread I made yesterday. 

 

5 pieces turkey bacon, chopped
1/4 cup chopped onion (I used a sweet onion)
2 handfuls spinach, torn in pieces
9 eggs
1 Tbsp water
salt & pepper

Saute bacon and onions in a couple Tbsp of coconut oil.  Add spinach and cook until it's wilted.  Scramble the eggs, water, salt & pepper and add to skillet.  Cook until done.  Optional:  Top with mozzarella cheese (if you do that kind of thing.)

Balsamic Marinated Chicken Breast

Fired up the grill on this beautiful spring day!  On my plate is a balsamic marinated chicken breast topped with sauteed mushrooms, grilled Brussels sprouts, peas, fried potatoes and onions (not strict paleo), and a piece of sandwich bread topped with honey-cinnamon coconut butter.



Balsamic Marinated Chicken Breast
1/3 cup olive oil
1/3 cup balsamic vinegar
3 cloves garlic, minced
2 Tbsp chopped fresh basil
few shakes hot sauce
1 tsp salt
1/2 tsp black pepper
4 whole chicken breasts

Combine all marinade ingredients in resealable bag and then add chicken breasts.  (I sliced the breasts horizontally since they were large.  Marinate for 2-24 hours.  Grill or bake at 400 for about 20-25minutes.

Cashew Butter & Sandwich Bread

This is the very first time I have made cashew butter.  It was really good & I had a plan for most of it.  From 3 cups of raw cashews, I yielded this much.  1 cup for my recipe & 1/2 cup for eating! (This picture is not the greatest, the sun shining in made it dark.  But, the sun is shining, yea!)

 

This sandwich bread is from one of my favorite paleo resources!  Her cookbook is full of great recipes and she is coming out with a new one this fall.  She recommends parchment paper for baking this bread.  I will second that recommendation & would probably go as far as to say all paleo baked goods need parchment paper!  I used 1 Tbsp of honey in my loaf.


 
This turned out well and is very good.  Even the kids liked it!

Just a day of reheated carrot cake pancakes.
And a bowl of chia seed pudding.
