Beet & Kale Smoothie

The first day back from vacation is always an exercise in getting back to normal.  For me it will be mowing the lawn, harvesting and preserving what is ready in the garden, and getting back to healthy eating!  This morning I was really craving all the good veggies I had not eaten for a week, so I came up with this smoothie using all things I had on hand.  I'm not sure if you will be able to get the smooth consistency in any other appliance other than the Vitamix, but give it a try if you'd like!

1 raw beet
1- 1.5 cups pf kale
1 frozen banana
1 cup frozen mango
1/2 apple (core, seeds, skin and all)
2 Tbsp chia seed
1.5 cups coconut milk

It turned out a lovely purpleish pink color!
