Mongolian Beef over Cauliflower Rice

This recipe tasted like it was a very unhealthy take-out dish!  It felt like a real treat when I was eating it.  It was well received by my family, did not take long to prepare, and made a quick-to-eat weeknight meal.  The fried egg on top was optional on the recipe, we liked it.  Enjoy this Mongolian Beef over Cauliflower Rice recipe.

Cashew Butter Dip

I love trying to incorporate a little protien into our snacks.  This was a nice alternative to peanut butter.

1 cup unsalted cashew butter
5 small dates
1/3 tsp salt

Blend together until smooth.  Serve with fruit, veggies, crackers, etc.

We ate ours with apples and celery.

Bicuits and Gravy

I had made up my own sausage gravy recipe, then someone clued me into this recipe.  It is much better!  I made a double batch of this gravy recipe and added 1 lb of cooked turkey sausage one night.  I placed it in a glass dish and put it in the fridge overnight.  The next morning, I made a batch of buttermilk biscuits.  I put the pan of sausage gravy in the oven with the biscuits.  The result was a wonderfully creamy, hot breakfast with very little clean up.  This recipe feels so indulgent and is a big hit with my family.  It makes the kitchen smell so good & inviting on a cold winter morning!

Chinese 5 Spice Lettuce Cups

This recipe is another great one from the Practical Paleo cookbook.  I did not eat mine in a cup today because I had some leftover salad from supper last night.  This is another way to change up ground turkey and fresh veggies.  Today I added avocado.

Steak & Eggs Family Style

Stuck in a breakfast rut?  How about some steak & eggs. Customize this to your liking.  Add as much spice or seasonings that you like.   Here's how we made ours.  It made about 4-5 servings.

3 cups hash browns (we used leftovers from last night consisting of red & sweet potatoes & onions)
1 sirloin steak, sliced thin
eggs (however many you need to serve breakfast to)
variety of seasonings (salt, pepper, parsley, coconut aminos, garlic, etc)
oil (I used avocado & olive)

Fry hash browns, season and spread out on baking sheet.  Keep warm in hot oven.  Season and fry steak.  Add steak on top of hash browns.  Fry eggs and add to the top.  Serve.

Oven Fried Chicken (Paleo)

Any fried chicken lovers out there?  It is not something I'm crazy about.  I had a job during my college days working in a grocery store deli.  One of my glamorous duties was breading and frying chicken.  I must have deep fat fried hundreds of pieces of chicken!  It pretty much has ruined me on fried chicken forever.

This oven fried chicken recipe has wonderful flavor, is allergen friendly, and does not include any of the things that personally gross me out.  :) 

I must have been very in tune to my "southern blood" when preparing this meal.  Fried chicken, potato hash and green beans.  Hubby & all the kiddos really liked this recipe!

BBQ Meatballs

I have posted this recipe before, but I just made it this week and they are so good!  Anyone out there meal plan?  I go in spurts.  I have been planning on weekends and asking the kiddos for input.  It has made life easier and they enjoy looking at the list and knowing what we are having for supper.  Would my weekly meal plans be helpful?  Let me know and I can try to post what we are eating at our house.  In the meantime, put this recipe on your meal plan this week!  If needed prepare them ahead of time and have it ready to pop in the oven after a busy day.
